1. Define the Purpose and Temperature Range
- Room type: Workplace or preparation area (+18°C to +20°C), pre-cooling chamber (0°C to +8°C), chilled storage (+2°C to +5°C), medium-temperature storage (-1°C to +8°C), frozen storage (-18°C to -24°C), or blast freezer (-35°C to -45°C).
2. Insulation and Structural Design
- Use polyurethane or extruded-polystyrene panels sized according to the target temperature: approximately 80 mm for chilling, up to 150 mm where required, 100 mm to 200 mm for freezing, and 150 mm to 200 mm fire-rated panels for blast-freezer applications where specified.
- Use reinforced concrete or insulated floors suitable for forklift traffic and moisture control.
3. Refrigeration and HVAC System Design
- System type: Choose monoblock self-contained equipment or split/remote systems. Remote systems can reduce heat and noise inside the room.
- System sizing: Account for incoming product load, product heat load, ambient heat gain, ventilation, people and lighting.
4. Safety and Monitoring
- Install temperature sensors, automated monitoring and alarm systems. IoT-connected monitoring can be used where appropriate.
5. Maintenance and Hygiene
- Design for easy cleaning, including suitable floor slopes and drainage to prevent pooling.
